Mediterranean Turkey Skillet

Ingredients
  

  • 1 tbsp olive oil
  • 1 pound lean ground turkey breast
  • 2 med zucchini, quartered lengthwise and cut into 1/2-inch slices
  • 1 med onion, chopped
  • 2 banana peppers, seeded and chopped*
  • 3 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 1 can 15 oz no salt added black beans, rinsed and drained
  • 1 can 14.5 oz diced tomatoes, no salt added diced fire roasted if you like the heat
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt if you like optional

Instructions
 

  • Gather and prep ingredients.
  • Heat oils in large skillet and add onion.
  • After cooking onions for a couple of minutes add ground turkey breast.
  • Cook turkey until no longer pink.
  • Add zucchini, peppers, garlic, and oregano.
  • Cook 10-12 minutes until vegetables are tender.
  • Add remaining ingredients.
  • Add balsamic vinegar.
  • Stir and cooked until heated through.
  • This was for our weekly lunches, so we portioned for the refrigerator.

Notes

* I can never seem to find single banana peppers.  They are usually in a package of 6 or more and I don't use banana peppers regularly.  I either omit it, if i cant find it, or use a sweet Italian pepper.  If there is a certain type of pepper you like, try it and see how it tastes.  enjoy!!
