
Mediterranean Turkey Skillet

Ingredients
- 1 tbsp olive oil
- 1 pound lean ground turkey breast
- 2 med zucchini, quartered lengthwise and cut into 1/2-inch slices
- 1 med onion, chopped
- 2 banana peppers, seeded and chopped*
- 3 garlic cloves, minced
- 1/2 tsp dried oregano
- 1 can 15 oz no salt added black beans, rinsed and drained
- 1 can 14.5 oz diced tomatoes, no salt added diced fire roasted if you like the heat
- 1 tbsp balsamic vinegar
- 1/2 tsp salt if you like optional
Instructions
- Gather and prep ingredients.

- Heat oils in large skillet and add onion.

- After cooking onions for a couple of minutes add ground turkey breast.

- Cook turkey until no longer pink.

- Add zucchini, peppers, garlic, and oregano.

- Cook 10-12 minutes until vegetables are tender.

- Add remaining ingredients.

- Add balsamic vinegar.

- Stir and cooked until heated through.

- This was for our weekly lunches, so we portioned for the refrigerator.

Notes
* I can never seem to find single banana peppers. They are usually in a package of 6 or more and I don’t use banana peppers regularly. I either omit it, if i cant find it, or use a sweet Italian pepper. If there is a certain type of pepper you like, try it and see how it tastes. enjoy!!
