My wife and I have always enjoyed a love of food and cooking.  About 20 years ago we got serious about having a better/healthier diet.  After plenty of research we came up with an emphasis on a lower sodium/less fat type of diet.  The problem was, the grocery stores were not on the same page back in the day.  Low sodium was not a thing.  It has only been in recent years that you can find lower sodium choices throughout the grocery store and there is plenty of room for improvement.  I won’t even bring up restaurants, as they can be out of hand with the salt, unless you frequent high end places, and we do like the places that cater to our needs.

Through the years, we’ve had lots of fun tweaking recipes to suit our lower sodium/less fat lifestyle.  Surprisingly, well not really, the recipes we’ve developed over the years are delicious.  I believe the taste, quality, and variety of food we eat now is better than the typical stuff we cooked 20+ years ago.

Shortly after we adopted a lower sodium/less fat lifestyle, we realized our weak link was buying lunch out, during the work week, as we both work full time.  There are very few healthy options when buying lunch out during the work week.  As a result, we started making our lunches at home, bringing them to work.  There are several benefits to this.  Obviously, we get a healthy, delicious, high-quality lunch, and it’s significantly less expensive than if I were to buy something of the same caliber out. Further, I don’t need to take time out of my day to go out and buy lunch, which helps me finish my workday sooner.  Also, everyone at work is very interested and envious about what I bring for lunch daily because of how it makes the kitchen smell after heating it up in the microwave.  

I always knew I wanted to make a website to share recipes as family and friends have always been interested and asked for recipes.  In addition, with the interest I have created at work, I knew it would be well worth it.  Finally, it serves as a menu for me as we need to pick two main dishes for an average week.  We usually cook two dishes for our weekly lunches on Sunday’s.  It’s a little bit of work, but well worth it.  From our family to yours, I hope you enjoy the recipes.  I will try to add recipes weekly for now during the cold months.  Once springtime arrives I have tons of stuff going on in the yard and will add content as able.  I was just glad I was able to get things started with LightlySaltedCreations.com this winter 2026.
