Gather ingredients.
In a large resealable bag or a bowl, add the chicken breast cubes and season with pepper (salt optional). Add one tablespoon olive oil and one tablespoon Cajun seasoning and toss until coated.
Heat skillet with 1 tablespoon of olive oil. Add seasoned chicken bites.
Cook 5-7 minutes until cooked through, and browned.
Remove cooked chicken to plate, cover and set aside.
In same skillet, stir fry the onion, adding a small amount of olive oil, if needed, and cook about 2 minutes.
Add broccoli, zucchini, and bell pepper.
Season with remaining Cajun seasoning..
Cook on medium until vegetables are crisp tender.
Deglaze pan with chicken stock, then add cooked chicken bites back to the skillet and mix to combine. Garnish with red chili pepper flakes and fresh parsley if desired.
Serve with or without rice. We have portioned out for work lunches.
