Chicken & Vegetable Skillet

Ingredients
  

  • 1 lb Skinless, boneless chicken breast cut into 1-inch pieces
  • 2 zucchini, sliced
  • 2 red bell peppers, chopped into chunks
  • 1 broccoli crown, broken into florets
  • 1/2 onion, sliced
  • 1/4 tsp pepper
  • 1/4 tsp salt optional
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning see our Cajun seasoning recipe
  • 1/4-1/2 cup low-sodium chicken broth
  • 1 tbsp parsley, fresh chopped for garnish
  • 1/2 tsp red chili pepper flakes optional

Instructions
 

  • Gather ingredients.
  • In a large resealable bag or a bowl, add the chicken breast cubes and season with pepper (salt optional). Add one tablespoon olive oil and one tablespoon Cajun seasoning and toss until coated.
  • Heat skillet with 1 tablespoon of olive oil. Add seasoned chicken bites.
  • Cook 5-7 minutes until cooked through, and browned.
  • Remove cooked chicken to plate, cover and set aside.
  • In same skillet, stir fry the onion, adding a small amount of olive oil, if needed, and cook about 2 minutes.
  • Add broccoli, zucchini, and bell pepper.
  • Season with remaining Cajun seasoning..
  • Cook on medium until vegetables are crisp tender.
  • Deglaze pan with chicken stock, then add cooked chicken bites back to the skillet and mix to combine. Garnish with red chili pepper flakes and fresh parsley if desired.
  • Serve with or without rice. We have portioned out for work lunches.
