Ingredients
- 1 lb Skinless, boneless chicken breast cut into 1-inch pieces
- 2 zucchini, sliced
- 2 red bell peppers, chopped into chunks
- 1 broccoli crown, broken into florets
- 1/2 onion, sliced
- 1/4 tsp pepper
- 1/4 tsp salt optional
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning see our Cajun seasoning recipe
- 1/4-1/2 cup low-sodium chicken broth
- 1 tbsp parsley, fresh chopped for garnish
- 1/2 tsp red chili pepper flakes optional
Instructions
- Gather ingredients.

- In a large resealable bag or a bowl, add the chicken breast cubes and season with pepper (salt optional). Add one tablespoon olive oil and one tablespoon Cajun seasoning and toss until coated.
- Heat skillet with 1 tablespoon of olive oil. Add seasoned chicken bites.

- Cook 5-7 minutes until cooked through, and browned.

- Remove cooked chicken to plate, cover and set aside.
- In same skillet, stir fry the onion, adding a small amount of olive oil, if needed, and cook about 2 minutes.

- Add broccoli, zucchini, and bell pepper.

- Season with remaining Cajun seasoning..

- Cook on medium until vegetables are crisp tender.

- Deglaze pan with chicken stock, then add cooked chicken bites back to the skillet and mix to combine. Garnish with red chili pepper flakes and fresh parsley if desired.

- Serve with or without rice. We have portioned out for work lunches.
