White Bean Chili

Ingredients
  

  • olive oil
  • 1 pound ground chicken
  • 1 cup celery, coarsely chopped
  • 1 can diced tomatoes 28 oz can
  • 1 can great northern beans, no salt added, rinsed and drained 15 oz can
  • 1-1/2 cups onions, coarsely chopped
  • 1 cup chicken broth, low sodium
  • 3 cloves garlic, minced
  • 4 tsp chili powder
  • 1-1/2 tsp ground cumin
  • 3/4 tsp ground allspice
  • 1/2 tsp black pepper

Instructions
 

  • Gather ingrediencies and chop vegetables.
  • Heat olive oil in skillet. Cook onion and celery until crisp tender.
  • Add ground chicken.
  • Cook chicken until no longer pink, add garlic. Stir and cook 1-2 minutes
  • Add other spices.
  • Stir and cook for another 5-6 minutes.
  • Add skillet mixture into crockpot.
  • Add beans and tomatoes into crockpot.
  • Stir to combined and cook on low for 6 hours.
  • And portioned out for this weeks lunch at work.
