Tex-Mex Ground Turkey and Sweet Potato Skillet

Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 1/2 large red onion, finely chopped
  • 1-1/2 pounds ground turkey breast 94%
  • 2 cloves garlic, minced
  • 1-1/2 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • pepper and salt to taste
  • 1 large red bell pepper finely chopped
  • 4 oz can green chilies
  • 2 cups sweet potatoes, peeled & finely chopped 1 large potato
  • 1 bag fresh green beans, cut into bite sized pieces
  • 15 oz diced tomatoes, no salt added, fire roasted
  • 1/4 cup water
  • 1/2 cup cheddar cheese, grated optional
  • fresh cilantro for garnish optional
  • sliced avocado for garnish optional
  • Lime wedges for garnish optional

Instructions
 

  • Gather ingredients.
  • Peel sweet potato.
  • Chop veg and combined dry ingredients.
  • Place olive oil in a large skillet over medium-high heat. Once hot, add turkey.
  • Cook turkey for a minute and add onion.
  • Cook until the turkey is browned, breaking up into small pieces
  • Add minced garlic and spices.
  • Stir to combine, cook for 1 minute until you smell the garlic. yum!
  • Add bell pepper, green chiles, sweet potatoes, green beans, tomatoes, and water.
  • Stir to combined.
  • Bring to a simmer, cover with a lid, reduce heat to low simmer. Cook for about 15 minutes.
  • You want the sweet potatoes to be fork tender and green beans not to be mush.
  • And as you may know. We cooked this on Sunday for a few lunches at work this week. Lunch is going to be good this week! It is a short week for us, so we only cooked one dish today, many weeks we do two,

Notes

As you may know, we cook our work lunches most Sunday’s as we did today.  Usually we cook two separate dishes so we don’t eat the same thing every day. Not to mention, not to many dishes we cook make 10 servings as we both work full time.
